Ok so I'm late to the party but I have a bookstore and just now started adding categories (i know) and I'm realizing now that I have no idea how to sort all of my listings into said categories without having to go through each individual listing.
So is there a way to, say maybe search in bulk listings for all Fiction books so I can pull them easily into the proper category? I can't get my brain to figure out how to do this without having to touch each individual listing. Please tell me there is a way.

Since I don't have a store, I can't advise on what sorting tools are available to you. If you can't find the appropriate tool in your store management, this tool may help.
https://www.isdntek.com/ebaytools/ItemSpecificScanner.htm
The tool will group your items by category number and name and can create a CSV formatted report that you can paste into a spreadsheet.
You have 16 categories, and your largest category is Books:Fiction & Literature with 192 items. Unfortunately, the tool does not translate to store categories, but at least it can give you a sorted list to work from.
I suppose you could specifically move all the smaller quantities to their respective categories and bulk assign the remainder to Fiction.

I just remembered that eBay's File Exchange supports store categories. That means you could take that spreadsheet, add a store category column, and upload a CSV revision file to File Exchange.
For instance, this is a chunk from the sorted spreadsheet :
ItemID | Site | Category | CategoryPath | Title |
283948417361 | US | 171228 | Books:Fiction & Literature | The Perfect Family by Carla Cassidy (2005, Hardcover) |
283948841736 | US | 171228 | Books:Fiction & Literature | Calamity Jayne (Tressa Jayne Turner Mysteries) Paperback Kathleen Bacus |
283948843148 | US | 171228 | Books:Fiction & Literature | Red Hot Santa by Adair, Banks, Britton, Roberts short stories romance paperback |
Take only a few required columns, and submit an abbreviated file with these few columns in order to add your store category (you don't need to repeat the site "Category", but no harm doing so, so I grayed it):
Action | ItemID | Site | Category | StoreCategory |
Revise | 283948417361 | US | 171228 | 12345678 |
Revise | 283948841736 | US | 171228 | 12345678 |
