eBay has a new background removal feature in the Mobile App listing tool, and will bringing it to the Unified lister on desktop. It is a basic cutout tool. However, it doesn't have a ghost feature where you can add back the parts of the garment hidden by the model.
There are YouTube videos that explain how to do this with Photoshop, where two photos are taken and cobbled back together again. One photo is of the item on the mannequin to show shape and form, and then another photo is of the item, flat, showing the hidden section, like the back of a v-neck shirt. both are cut out and overlaid to provide the ghost mannequin illusion.
Basically, you would need a photo editing tool that has a good edge-detection feature for snipping the cutout. Overlaying elements would be the easy part. Some blending might be necessary on some items.
