Can anyone point me to any documentation on the template language that is used to create the product listing. I obviously know the super simple basics of showing attributes of a product in the listing using the parens {{ }} but and the image function for product images {{IMAGE()}} but is there a list of more functions anywhere? ability to do simple loops, if-statements, etc? maybe some basic string manipulation like TRIM, SUBSTR, ETC...
any help greatly appreciated!

eBay originally had something like that for stores, but that has been gone for some time.
Third party listing tools use various wildcard placeholders for creating listings in bulk. I can't remember which company uses the {{}} symbols to mark off data. I don't believe eBay has any features like that.
eBay now has a bulk listing tool found in Seller Hub under the "Reports" tab. The bulk uploader (based on eBay's older File Exchange) uses information uploaded in spreadsheet format to create and modify listings in bulk. That is probably where you should focus for bulk uploads in the future.
In seller hub, you would download a template for your particular category. The XLSX template will include drop lists of recommendations, along with instructions for each of the relevant fields. After populating the template, export or save as a CSV file and upload that file back to eBay's file exchange.

ok thank you, i will look into this a bit more...and I think the company is ChannelAdvisor that uses the {{}}
