I accidentally purchased an item, and cancelled it 5 minutes later. I received a message that I could not cancel it because it had already shipped, which is impossible. What should I do.

Which is impossible? And how do you possibly know that?
Remember, you bid, you win, you pay and then you deal with the item. Maybe you can relist it.

Think before bidding
Start being responsible.
The seller does not have to cancel:
though most will to save em the trouble and of course put you on there blocked bidders list.

Please forgive the other responses. Cancelations are frustrating for the seller.
However, mistakes happen. I have personally had 10+ listings of the same item, jumping back and forth through feedback and then purchased the wrong one. Mistakes happen. As a seller, I try to understand it.
They are correct that it is up to seller if they want to cancel. One paid, ebay leaves it up to each seller on how to handle cancelations.
I would start by sending an apologetic message to the seller, informing them of your mistake, asking them to please cancel.
You should check their return policy. If they accept returns, that maybe your next option.
After that, I might suggest that you resell your item.
In the end, you can leave appropriate feedback based on your experience. Keep in mind that you can not use the threat of bad feedback to get your seller to cancel. If you do, they can just get any feedback you leave removed.

This is a good question. I'll assume you did, since they say they have shipped it. (???)
If not... you could simply not pay for it and let the seller cancel the order for non-payment. It'll get you an Unpaid Item strike, but it takes 2 of those to wind up on seller's BBLs. Moving ahead, you just need to proceed with caution.

buyers can not cancel so you should not start out with saying that you canceled the item you won
buyers can only request to cancel

The seller is not being difficult with the cancellation, your title is abhorrently misleading. Many sellers' livelihoods are based here and cancellations take up both their time and impact their revenues.
Perhaps it would be best to view it from that point of view vs your own.
And no, it is not impossible. Many people ship or at least print labels within minutes of sales. Voiding labels is also a complete pain.
I suggest you accept the item then try to sell it yourself so you then realize and understand how it can be difficult. Hopefully the buyer will not request a cancellation after you've printed the label.

Cancellations on ebay are requests that you send to the seller. Sellers are not obligated to honor them. These requests can be honored or declined depending on the seller and the circumstances.

...and since the seller did not offer a cancellation leaving bad feedback for something that was not offered in the listing would violate the ebay feedback policy. That may suspend their ability to buy, leave feedback and possibly opt them out of the MBG.
Of course it is all up to the buyer to burn a bridge for their own mistake if they wish.

A seller could print a label, put it on a box, and hand it to a driver to be deposited at a mail box within one minute.
If the seller still had the item he or she would likely gladly accept the cancel to avoid dealing with a customer who has already shown bad faith by trying to renegotiate / cancel a transaction.
Much of the time such bidders retaliate with negative feedback and force returns, costing the seller more time and money than the auction was worth to begin with.
Business ethics are kind of important.
