I dont know weather this is the right subforum...
Basically if I order an item and the seller uses a courier which allows me to change the time and the delivery address, am I allowed to do so? Would I still be covered under the EBAY money back guarantee if something was to go wrong with the delivery or if the item I receive turns out to be faulty?

No buyer protection coverage if you change the address. Any reason why you do not use the address as the shipping address when you make your purchase?

Mail direction voids your MBG coverage. Why do you need to have the package forwarded? If you're no longer at that address, can you ask the carrier to hold for pickup, then go pick it up instead @mark-2041205 ?
Edit: I see you're in Croatia. Are you using a US-based freight forwarder? If so, that voids your MBG coverage.

You can make minor changes - maybe a typo in the address, small changes needed to comply with space limitations, etc.. just don’t change to a completely different address.

When you made your payment, you had the chance to change the delivery address.
The seller is obligated to ship to the address he sees at that time. Doing otherwise voids the little protection he has per eBay.
Why do you need to change your delivery address?
