Is there a way to access photos & descriptions of purchases that are ghosted out on the list of your prior purchases?

Probably not. eBay removes listings 90 days after the listing ends, so unless it's a multi-quantity listing, the pictures and descriptions are removed after 90 days.
Occasionally, if the seller uses the out-of-stock option, a listing may stay active (but unsearchable) for up to 90 days after the quantity goes to zero. That may mean that some listings stay available for longer, but once the listing is removed, it's gone.

You can search with Terapeak for up to a year.
Limited information is provided but there is a thumb nail picture, listing description date and amount sold for.

Terapeak is only available to selling accounts. OP was asking about purchases, and has not received any feedback for selling. Unless they have another account that is registered for selling, they won't be able to access Terapeak.
However, the same information is available in their Purchase History for 3 calendar years, except possibly the picture.
