Are you currently watching more than 200 items? If so, try deleting some or moving some items to another list. Although the Watch List should be able to hold up to 300 items, it seems to work much more reliably when watching 200 items or less.
Some Watch List issues can be solved by explicitly signing out of your eBay account, and then signing back in.
It may also be worth trying a different browser to see if that affects anything. If you are able to save items to your Watch List using a different browser, try deleting your cache and eBay cookies in your original browser.
