and as of last night I can't add any more. I deleted all expired items from my watch list.
Not only can I not add new items to my list what is stranger is that all my older items are on the list. However, when I click on my older listings that are being watched it will say "add to watch list" instead the watching heart. I seem to be having similar issues on my other eBay account. I will have to call but wondering if I am missing something simple.

I have experienced this issue in the past. What I did was go into the listings themselves and clicked remove from watch list and that fixed my issue.

Hmm. The listings themselves don't say they are being watched- as they should and always have before. So maybe I will try deleting my entire watch list and starting from scratch. Luckily I don't have a ridiculous number of listings but with eBay so slow rewatching over a hundred items will still take a chunk of time. I will think this over until I get home from work. Thank you!

The number of items that the watch list can hold is 300 -- though for most consistent operation, I recommend watching 200 or less. Your other custom lists can hold up to 200 items each.
A couple things you might try before deleting everything on your watch list and re-watching.
Try explicitly signing out of eBay and then signing back in. I have found that often helps with watch list issues, particularly if you are having difficulty seeing if an item is on the list or not.
Using a desktop browser, go to the old "all lists" link to see if the old items still appear:
Try deleting items directly from that "all lists" page -- often that works better at getting rid of items that cannot be deleted in the normal fashion.

What benefit do you think you are going to gain from watching viewing your own items? While eBay at times my make suggestions to buyers base off of what other buyers are watching or viewed. eBay doesn't count instances of when sellers view or watch their own items. Really your just clogging up your own watch list and skewing your items watch or view count so it is hard to tell what is real interest in your items or your own activity.

Well, by watching my own items I get a notification when listings are about to end. Sometimes I decide to take listings down at this point if I am out of free listings. Of course there are ways for me to track this without watching them but this works for me and I don't see the harm. I can easily see how many people are actually watching minus my one on the count.
