Unable to update any shipping information when listing via mobile app, no error messages jusy can't click on anything, doesnt matter what I'm listing.
Restarted phone, Uninstalled, re-installed app, customer service opened ticket
Anyone else have a similar issue?

You may need to set up a default shipping policy using a desktop browser first; after doing that, you may be able to list via the eBay app.
