Let's try this again. Apparently everything about eBay is broken and my post just got deleted for "authentication failed"
I have 3 options for shipping in all of my small items
Economy, Standard and Priority Mail
None of my listings have local pickup
But when I go to view the listings and look at shipping and shipping and payments it will only show 1 or 2 options and local pickup is available! I can also change my zip code and be given a different set of wrong shipping options.
Meanwhile I am getting daily emails from customers asking for faster shipping. All I can do is tell them eBay is broken and I cannot help them "on ebay" but that they have other options. Since my products are unique they find my website and order there... where it works!
Ebay support is less than worthless. I have contacted them 3 times and all I get are clueless robots from foreign countries. I'm told each time that the issue will be escalated and that their support team will contact me soon.....

Bad new, I'm sorry: This is actually a deliberate choice by eBay. Their policy is that they will show a more expensive shipping option only if it's also a faster delivery, based on eBay's own estimated delivery dates.
You could try mentioning the cost of expedited shipping right in your listing description, and advise buyers to just wait for an invoice.
