I notice that the Order Details page (and the other pages showing transaction details, etc.) is still showing the Shipping method as First Class when it was actually upgraded by me to Priority.
My buyer had selected First Class Package, which was Free and which was the default Shipping method for the item, but I upgraded him to Priority at no charge in order to get insurance on what had turned out to be a high-value auction result. I selected Priority Mail Flat Rate Small box, and purchased the label through the eBay Shipping form as usual.
The other details appear correct, including the tracking number, which is good because I have to file a claim for a lost shipment and use the eBay transaction record for proof. I'm hoping that anyone at the USPS who does a visual review of the submitted paperwork (in PDF) will either not notice the wrong Shipping method or will know to doublecheck the tracking number itself.

eBay merely shows what the buyer selected. USPS can't see eBay order details.
The tracking number includes the class of service in the first 4-5 digits of the tracking #.

They can when you have to submit the darn thing as proof in a Lost Package claim. 🙄
I pulled up the Order Details page for that order number, which shows separate boxes for Purchase details, Shipping details and the Item(s) shipped. It accurately reflects all the data for the sale, including all the buyer's info, address, phone, etc., the amount paid, the extra charges for Shipping, sales tax, etc. I submitted it in PDF form to USPS as supporting evidence for the Lost Mail claim.
In the Shipping details, it correctly reports the amount paid for postage as well as the tracking number for the shipment (so that if someone does look up the number on USPS.com, it will correctly show that it was a Priority mailpiece). The only error is that it states "Shipping method: USPS First Class," which is simply wrong. That was the default method, not the method actually used and reflected in the other details there.
