I just bid $5000 on an item with seven seconds left by hitting the confirm bid button that came up - but eBay didn’t take my bid and the item sold at starting bid for $2000!!! I am beyond bummed as I had excitedly waited 10 days to be able to bid. 😡😡

Sorry to hear that.
There are many things that can interfere with bidding, so you may want to check some things before your next important bid to make sure you are able to bid successfully at the end of an auction.
If your auction countdown is not behaving correctly, check to make sure your computer's time zone is set correctly, and the date and time are synchronized with an internet time server such as time.windows.com or time.nist.gov.

You may want to find an inexpensive item up for auction that you are interested in to make sure you are able to successfully submit a bid at the end of an auction.
In some cases, eBay may be requiring a payment method to place a bid, so if you have not specified a default payment method for bidding, leave some extra time to be able to enter payment information prior to placing a bid.
You may want to consider using a snipe service to place your bids for you if you continue to have issues bidding, or as a backup to manually bidding.

Use a good atomic clock and not the one on your computer.

I was surprised to find that my relatively new and up to date PC was not actually defaulted to synchronizing its time with the national standard on-line. I had to actually check the slide switch (in Settings) and then it reaches out periodically (not sure but I think once a day at least) to make sure it is in synch with the rest of the world. If you have a Windows box this is what the Settings page looks like:
