I accepted an offer on an item this morning. The item does not show up as sold
It is still listed as available
When I go back to the offer message and click Respond it tells me I made the person the winner

They are changing how offers are done.
Now, the item stays active until it's paid for, so anyone can still buy the item.

This new feature roll-out is horrendous. If the buyer who sent the offer you accepted does not pay for the item, they do not get an unpaid item strike. How is that fair? Also, if a buyer offers on multiple items that you accept, they do not always have an option to request a combined invoice from their cart. When they check out they end up having to pay the full shipping price on each and every item. I just had a buyer offer on five items. All were accepted, but since they don't appear on my Items Awaiting Payment screen I could not send an invoice. Instructed the buyer to go to his cart and click on "request invoice" which he was unable to do. He checked out and paid way too much shipping. This creates additional problems. First, the buyer thinks I as the seller are charging too much for shipping. Second, once he paid, the items showed as individual orders on the Items Awaiting Shipping page. So I can just send out five packages, or box them up together, send them out, and refund the extra shipping he paid. But you can't purchase insurance for all the items. Only up the amount of the one item you select to print the label from. So you are taking a chance of losing money because when you file an insurance claim it can only be for the amount of the one item. I understand that eBay wants to reduce unpaid items, but there has to be a better way than this. To me it looks like yet another way eBay to generate income for themselves.
