Hi, I sold an item that has been paid and is in shipping status. Meanwhile, the amount to be paid to me is in holding status due to my new account. It is currently set to transfer money to my bank account. Since it was initially set up to go to bank and in holding, wondering if I can change it to be sent to my PayPal account instead, or will it mess things up if I change it in the middle?

No; you cannot. You get paid one way and one way only on this site. Direct deposit to your account (after hold)

PayPal is no longer an option that eBay sellers can use to get paid (buyers can still use PayPal to pay for their purchases). A seller must attach a bank account to their account in order to get paid, payments are sent to the attached bank account. As a new seller your payouts will have a 30 day hold until you prove to eBay that you complete transactions. There is no way to circumvent either of these policies.

Payments no longer go to PayPal.
You can attach a debit card to get nearly instant "on demand payouts"................ for a fee. There is a 2 day delay to set up.
As a new seller, delays may apply.
Getting paid for items you've sold | eBay
Demand payout can not be done if set up for "daily" (daily when available) payments.

It wasn't easy for me as an established seller to get "instant payouts". I would think one has to be around for some time to get it. Person can use his debit card which is usually attached to a banking institution. It took quite a while for me to get "instant payouts". eBay will request a lot more information than from doing just "daily payouts".

Ebay holds the payments for new sellers. You might not see a nickel for 30 days. You can always print the shipping label through Ebay Shipping. Ebay will release the exact amount of the shipping label even if the money is on "hold." Goodluck.

Thanks for that answer! Then in this case since the pack was sent yesterday and payment to me pending until next week, would I be able to switch for the payment to go to my other bank account? Or would switching now mess things up.
