Sold something for $440 but only got $360 in my payment, does anyone know why?

That item sold using eBay's Managed Payments, not Paypal.

eBay would take their full final value fee up front, instead of billing your Seller Account.

The fvf would be 30¢ + 12.35% of the buyer's total payment amount (shipping & sales tax included).

If the buyer was non-US (even if they were shipping to a US address) you would be charged an additional 1.65% "international fee".

EBAY charges fees based on (purchase price + shipping cost + sales tax).   Unllike PayPal where you used to see "full amount" with MANAGED PAYMENTS (they take out all fees first and then give you the NET amount).

Also with MANAGED PAYMENTS it takes 5-7 days before money actually appears in your bank account.
