We can no longer see the SKU for an item when you click on it in the app. This used to show and it was very useful for sellers but now you have to go into the item and revise listing to be able to see your SKU. Any other options?

If you are in the listing, you can't see it, but if you go to your "Selling" page, click on "Active" listings, you can search for the item and see the custom SKU there. If you click on a listing, you are being presented with the public view, which is never going to show your custom SKU.

That may be WHY sellers can't see the SKU, but it is nevertheless true, as the OP said, that it would be VERY helpfu if the SKU was shown in the header of the listing page (as is "start date", for example), on both the app and desktop.
