Hey @ladymonz_onlineshop! Once a listing is gone, it can't be retrieved. We keep sold listings on file for 90-days and after that they're deleted. Depending on what type of info you need to keep track of, it's good to note that/store it off eBay.
Having said that, we do have sales reports that could help. Those are available on the website by going to the Payments section and then clicking on the Reports link to the left of the screen. You can also click into your transactions from the Payments section of the app and try to locate the specific sale that way.
