When starting a search, I always specify: (1) Show price/shipping from low to high, (2) free shipping, and (3) source as US only. How can I set these criteria as automatic search defaults?

If you are using the eBay app, you can set various filters and "lock" them if you have enabled lockable filters -- check your filter menu under "customize".
If you are using a desktop browser, you can set a few default search settings like sort order and the number of items per page using the "customize" menu which you can reach at the top of your search results where you can choose between list or gallery view.
For things like item location and free shipping, you cannot set that as a default, but you can set up a search the way you like it and save or bookmark the search. If you use the saved or bookmarked search as the basis for your future searches, you can maintain those default settings.
For item location specifically, there is a browser add-on called "eBay item location - my country only" which you can use to bypass eBay's "default" item location setting.

Use the little Menu icon, the 3 bars, at the top right of the search results to set your preferences. It's right next to the box that you're talking about changing.

If you are using Gallery View instead of List View, there should be a set of squares instead, just to the right of the sort order menu.
