At least if they want to snipe your bid do it before the item ends . Not 21 seconds after.

No, they sniped it 3 seconds before it ended.

ebay's time left information is rounded to the nearest minute. The exact ending time may be any number of seconds after that. If you can draw up the bid history using the app. you may see the actual ending time was 8:00:27pm. If the app doesn't give a bid history, sign into ebay the classic way without using the app, find the listing and click on the bid number. At the top of the bid history page you will see the exact ending time for the auction.
People cannot bid after an auction ends.

That was ripe for a snipe if you only put a single bid in for the opening price.
Looks like you're new so maybe you haven't realized it yet... reactive bidding is not a good strategy for a timed auction. You'll run out of time.
And as the others have stated, the auction ended 24 seconds after the minute.
The ending time on a listing shows in whole minutes, but a countdown clock will show in seconds.

The screenshot in the OP clearly shows the starting time as Sat 4/28/18 08:00:24
The last bid was at 08:00:21, three full seconds before the end.
We've recently seen examples here that were far closer, down to something like 08:00:23:30
