Today ebay sent a text to my phone number. which isn't even mine anymore. to "pRoVe its ReAlLy mE" I hate that. What if I lose access to that phone number? I'm more likely to end up locking myself out of my account than a "hacker" is to "guessing" my password.
How do I remove that option so that it's only a password I need or at most a code sent to my email not phone? I really dislike the idea that I had to use a phone number to sign up when that wasn't a thing for most of ebays history except for recently.

I have had buyers and seller call me a few times and it’s very annoying. They were all innocent calls about products I bought or sold but still I don’t want to get a call a month after I sell something telling me still if eBay wants to give my number out than stop charging me selling fees and I’ll handle everything outside of eBay. Anyway from what I can see you can’t remove your phone number. Go into your addresses in your account and your number will be at the bottom. It makes you put in a phone number so just put in a fake number but make it very fake (like 1234567) so they aren’t calling a real person.

You are WAY off topic in this thread.
The OP is asking about two step verification to log into eBay. Not sellers calling you.
If you are using a fake phone number you are going against eBay policy False or missing contact information policy.
Telling people to violate policy isn’t smart either.
Also putting in a fake phone number would not be a wise decision since your cell phone number is required to receive a code in case you get locked out of your eBay account.
If you are receiving unwanted calls from sellers turn on silence unknown callers, if your cell phone has that capability.
