Just had a seller give that as an explanation for an item i bought not being available? Is this possible or is it just an excuse from the seller as they sold the item elsewhere?

if the item item is listed on .de and ships to the UK so that it is shown on the UK site, any sale will be reflected on both sites.
If the seller listed the item separately on each site and it sold on the .de site, it will still show as listed.
When you open the listing on the UK site is it in pounds or Euros? If it is in Euros then the listing originated on .de so the UK listing should have ended if there was a sale on either site.
