Seller dropped package off at USPS in her neighborhood in their bin on Saturday night. When she got home later that night she noticed an email from the Buyer saying to send to a different address than what was printed on the label. Does anyone know if I can somehow retrieve the package and correct the address since it is just in the bin still?

Sellers are responsible for shipping to the address provided on payment. Any other address loses the seller their seller protection. Most sellers will not respond to an emailed change of address since that is how scams start.

There's a trick some thieves use to steal items. They wait for an item to be sold, then they message the seller asking for the item to be sent to a different address. Some sellers don't notice that the message was not from the actual buyer. Wanting to be helpful – and ignorant of the fact that they're losing their seller protection – they send to the address. The thief gets the item, and the seller is left holding the bag.
That might or might not be what happened here, I'm just informing you of the possibility.

No ..just let it be shipped. Per ebay rules you must ship to the address the buyer gives with their payment. Buyers see that address when they checkout so they are in control of the address they give you.
