I would like to remove and donate some of my items that have not sold in a while.  How will this effect my sellers standard?

It won't - you can cancel fixed price listings whenever you want to cancel them with no penalty. 

You only need to make sure you remove the listings before you donate the items, so you don't sell something and have to cancel the sale 🙂
