Here you can exclude international shipping locations minus the UK: https://www.ebay.com/ship/prf/excludeRegions

I recommend to exclude continents if possible, not the countries. Which is not possible for Europe if you want to ship to the UK.

You include shipping to the UK at the time you make your listing under the shipping section.

Just looking at 1 of your listings I see that you chose to EXCLUDE shipping to the UK.
