I sold an item and they entered the wrong shipping address. the buyer messaged me and provided their correct address. i tried cancelling the order but there was some weird math going on for the refund so i decided to not cancel. i cant change the zip code on the shipping label (despite being able to change the entire address) so what happens to the shipping charge paid by the buyer if i use another service like pirateship?

In order to keep your seller protection you are required to ship to the address provided by Ebay, NOT an address in a message. If you change the address, you will not be able to prove delivery to the buyer's Ebay shipping address and the buyer can file a refund request due to item not received and Ebay will find in favor of the buyer.
Once you have verified that it is actually your buyer that sent you the message, you can suggest that they request a cancellation so you can refund and relist the item so the buyer can re-purchase the item using the corrected shipping address.
