I am annoyed that I have had a restriction placed on my record for unpaid items and am unable now to bid on new auctions.
I had contacted the seller to inform her that I had further items that I was bidding on and she was then going to invoice me. Instead eBay cancelled my items that I had already won before I had been given the opportunity to complete the transaction.
How is that fair?

If a buyer does not pay within 4 days, then on the 5th day the seller can cancel the transaction due to "buyer did not pay". Many sellers have their preferences set to automatically cancel transactions for non-payment.
Ebay does not restrict buyers who only have 1 unpaid item strike on their account, so there must be more.
Per Ebay:
All unpaid items are recorded on a buyer's account. Buyers who have excessive unpaid items, or canceled transactions, may have limits imposed, or lose their buying privileges.

If you got a reply from the seller that s/he would hold off cancelling for non-payment to a time beyond the time s/he actually did do it, that is grounds to appeal the strike:
You can appeal an unpaid cancellation if:

You can prove that the seller agreed to a later payment date in messages.
