What to do when buyers accept a transaction, now would like more information, and you are given email addresses and text numbers to correspond with that are invalid? Thank You

You don't communicate with them because they are scammers. After 4 days of non-payment, you can cancel the transaction using the reason that the buyer didn't pay. Then you can move on and relist.
Because you are a new seller, you are a scammer magnet I'm sorry to say and you'll experience more of this. Consider listing as Fixed Price (no auctions or best offers) and turn on the option in the listing form to require immediate payment. That way, the item isn't sold until paid for.

It's a SCAM. Always do ALL of your communication through eBay. Do NOT reply via email or texting.
If the buyer hasn't paid, wait for 4 days for payment. On the 5th day, if you still haven't been paid, file a Cancellation with the reason 'Buyer didn't pay'. That cancels the transaction, removes any feedback already filed and the nonpaying buyer gets an Unpaid Item Strike from eBay.
If this nonpaying buyer gets 2 or more UPI Strikes in their account, they will find that they are blocked from buying by many sellers who have set up an automatic buying block for having multiple UPI Strikes for up to 12 months.
You can also put the nonpaying buyer in your Blocked Bidder List so they can NEVER buy from you again.
