Hello,
I sell print-on-demand (POD) products on eBay, but I’ve noticed that the quantity is always limited to one and I’m unable to change it. Since these items are made to order, I’d like to be able to offer more than one in stock.
Could you please advise how I can adjust the quantity for POD listings or if there are specific settings for made-to-order products?

eBay listings allow multi quantity.
It's possible that
A. Your 3rd party software doesn't allow it, or
B. You are at your listing limit and can't add more quantity
You can set your listings for Out Of Stock, which will keep the listing active even when you sell your 1 item. Then you can add more quantity.
You may want to enable "Out of Stock" for your account.
With that setting, you can change the quantity to 0 (or sell your last one), and the listing will stay active.
This is an account-wide setting that will apply to all your listings.
To enable the "Out of Stock" setting
1) Go here https://www.ebay.com/uas/selling-pref
2) Turn ON the switch for "Listings stay active when you're out of stock" under the "Multi-quantity listings" section.

When the "Out of Stock" setting is enabled, eBay will NOT end your listing when the quantity gets to Zero. The listing, with its sales history, stays active. When your next shipment comes in, you can add inventory to the listing again.
This applies to ALL listings. So if you have any one-off items... for example, a used coffee mug, when that mug sells, the listing will still be there with 0 quantity. You will manually end any listings that you do not expect to restock.
When items have 0 quantity, they will be hidden from search.
When items are restocked, they will appear in search again.
