I have created an ebay account that I would like for one of my employee's to manage. However, I do not want them to have to sign into my ebay account to manage from posting to payment. Is there a way to do this?
I have invited them and given all of the access available to give, but she cannot see when someone bids on the product that she listed, only I can see it and accept it.
Is there a way she can manage it all without having to sign into my account to do so?
Thanks!

Your employee will need to sign in to your Ebay account in order for them to manage it.

Sorry, you can't give partial access to an eBay account to another person.
When you have an eBay account, the person logged in, if they have the education, can access the eBay member's account information such as their Social Security Number, a bank checking account and their DOB based on a Driver's License/US passport. You can set up a new Checking Account (there are cheap/free accounts online with recognized banks) so that the employee that manages the eBay sales can't get into your business accounts, but the SSN and DOB have to belong to the eBay member that owns the log in information.

If you're referring to Multi-User Account Access, they are limited to only those max 7 permissions that can be granted and managed from their linked account, as I understand it.
If you have questions about it, there are "Chat with us" and "Have us call you" contact links at the bottom of this Help page >>> Multi-user account access
We want your journey here to be as great as can be, so we have put together some links to help you get quickly familiarized with the eBay Community.
