Is there a way to block sellers?

I just had, yet  another,  bid canceled and the stated reason is "Bid cancelled by seller". Now that is a pretty dam insulting and stupid reason. I am really surprised that eBay allows this behavior. It is downright insulting to buyers. I am sick and tired of having my bids canceled for no good reason. I just don't have the patience or time available to deal with sellers whom jerk me around.

I have been buying and selling on eBay for over 25 years. I know I can block buyers and I have about a thousand of lousy buyers on my Blocked Buyer list, all of people who have, one way or the other, jerked me around or just flat out defrauded me.

Any ideas of how to block Sellers who don't operate fairly?

Sellers can cancel a buyer's bid for any reason or for no reason at all.  I looked at your feedback received as a buyer, as a seller, and the feedback you have left, and I don't understand why anyone would cancel your bid.  I am guessing that the seller started the bidding at too low a price and doesn't want the item sold for a low price.  Look at listings that are fixed price (Buy It Now) and you can avoid having your bids cancelled.

Sometimes sellers have to correct a mistake in a listing; in order to do that, outstanding bids must be cancelled first. I am not saying that sellers never cancel bids for inappropriate reasons -- clearly some do -- but there are times when a seller has to cancel bids.

You cannot simply block a seller the way that a seller can block a bidder or buyer, but you can exclude the seller's items from appearing in a specific search.

From your search results, go to the Advanced Search page to the seller section, select "only show items from" and then check "exclude". Enter up to ten seller usernames separated by commas and hit "search". Then bookmark or save the search results.

If you use the bookmarked or saved search results as the basis for further searches, you can continue to exclude those sellers' items from your results.

You can block up to 10 sellers' items from showing up in a search result using the filters in Advanced Search or in the left column of the search results page (More Refinements: Seller).  You find the filter where you limit the results to those of given seller(s) and change the "Include" to "Exclude" and list up to 10 IDs in the following text box.

You can then save the search (link towards the top left of the results) and then access the saved search in My eBay: Saved Searches (you'll probably want to turn off notices of new listings while you're there) changing the keywords and other filters as needed to find what you are looking for.  You can save multiple searches with up to 10 sellers excluded in each to use for searches in different categories (or other way to distinguish which set of sellers is most likely to have listings in what you are searching for).
