My email address in my account is the one I want to use however eBay emailed me at a different email address (Gmail) and I don’t know why

Are you certain the email was from eBay?
The email address eBay uses is in your personal contact info here:

eBay may also send some messages from members to your email based on your Communication Preferences under Delivery Options:

There has be a rash of phishing emails going around claiming to be eBay.
Delete it.
