Is anyone else having trouble editing listings with variations? It isn't letting me update quantities.

Today, I've been notified by PayPal of two sales being disputed. Buyers both claim they didn't authorize the payment. One is from 5/22 and the other from 6/5. How far back can someone claim this and how do you handle it or prevent it in the future?
