What are the payment protocols when selling something for $5,000.00-$10,000.00?

Buyer asked me to delay shipping until next week. I don't want to get dinged by eBay for late shipping...Do I need to call them or is there an easier way to notify it's the buyers wish and I'm not late?

Is there a way to disable listings eligible to send an offer?

There are some items that come up "eligible to send an offer" that I will already have at rock bottom pricing .....Is there a way to disable the suggestion so I don't keep getting it for certain items?Thank you.
