how do i change the 'ship from' address to another one not on my profile since the sold item is not in my possession.

I am very unhappy with dropping PayPal as a payment conduit. I like the protection of a third party handling the finances of a sale. The idea of ebay having my bank account information is a terrible one.I will not be selling on EBay again.
