Where do you opt out, to not allow ebay to change your for sale item without the sellers permission?

Have they done away with the my eBay lists again? Listed items only have "watch item" as an available option as of today, for keeping tabs on an item.

Under my ebay purchase history it shows an order has been cancelled, but is pending and that "The seller canceled this order—just confirm that you received a refund." with a link that says reply now. I have never had this happen before - cancellation...
