if i offer same day handling and someone orders on saturday or sunday does that mean i must ship it on monday?

In your site preferences, you can put a cutoff on time to ship.

Yes.  They have missed your cutoff time for Friday, but clearly they have paid before whatever is your cutoff time on Monday for same-day shipping.

The order details will give you ship by date.  In general though I avoid same day handling, I find that giving customers a cool off period saves a lot of trouble.
