when using calculated shipping; is there anyway to have insurance based on winning bid, automatically added in?

No, there isn't. You have to just estimate what the winning bid might be, and add the insurance as a handling fee.  If it sells for more than you expected, you can pay for the extra insurance out of your extra profit!
