Isn't the purchase of an item on Sunday (Sat or a holiday) the same as purchasing the next 'Business Day'? So, item with 1 day shipping bought today (Sunday) is telling me to ship tomorrow (Monday) - when in reality today's purchase would be the same as a Monday purchase, and '1 day shipping' would be 'Ship by Tuesday 2/11'- Correct?

The business day thing applies only to shipping, not to when the item was bought.
Since you have one day shipping, you are to ship the next business day. Today is Sunday. The next business day is Monday. You have until 23.59 Pacific time tomorrow to get the item in the mail. It would be the same if the item was purchased on Friday or Saturday.

1-day handling means you ship on the next business day. So if you are paid on Friday, Saturday, or Sunday, you must ship on Monday.

I had a one day handling time and even if I got a late night order it was expected to ship the next day so I changed my handling time to 2 days as it was more realistic when trying to ship larger packages that required a trip to the post office or Fedex.
