Why does eBay lock sellers into a shipping method based on category?

I've done this multiple times with stamps: Find a listing someone has and indicate that  you have one to sell now. Everything copies over, making your life a little simpler and faster to get a listing up and on eBay. But occasionally, I'll miss or forget to check the category and it may end up being Sheets. When I go to ship, a "Sheet" locks me into choosing USPS, even though I chose ebay Standard Envelope. The question is simple: Why can't ebay give sellers the option to override this stupid shenanigan? Sellers know what method works best and occasionally we make mistakes, but not having the ability to override the shipping method (not class of service) is a big pain. Ebay can help sellers expedite the listing process so they can make more money but then they can't turn around and let sellers override shipping? This is nonsense.

You can't ship sheets of stamps with Ebay standard envelope.

  • No coils or sheets of stamps or graded stamps

There is also a $20.00 maximum for using the eBay Standard Envelope -- unless you are selling very cheap stamps, you very likely will easily exceed the limit.

They don't let sellers override it because they don't sellers using it for the wrong category.

This is also not true. I have sold orders where eBay standard envelope covers up to $50 insurance, not $20. It's not a question about eBay standard envelope. It's a question as to why eBay will not be more flexible and allow us to change the shipping method for regular mail items (not priority, which has a SLA) when the SLA is the same but the cost is significantly different.
