I had a top rated status, but USPS for the last month have not been scanning my packages until three days after I drop them off, causing them to be late. What can I do?

Talk to whoever you're giving the parcels to; they are supposed to be scanning at acceptance. If you sent multiple packages at once, using the SCAN form helps a lot.
This will of course only help with future issues. Unless the parcels arrive within the estimated delivery time, those eBay dings will stay.

I have a Priority package right now with zero scans that they've had for a week........
I guess I should be thrilled that they at least picked it up when I scheduled it.
Don't count me as a fan of the post office right about now.

As what @cargo11 - I too stand in line and wait for them to scan and I bring the scan sheet if there is more than one pkg outgoing. I've never just dropped off pkg(s) from my very first shipment (I have trust issues with USPS) and just need that reassurance that the pkg(s) are in their hands.

Read the Riot Act to your local postmaster. They're supposed to be scanning in the packages. It's not rocket science, nor does it take a ton of time. It's expected to be done.
Aside from that, I do wonder how it is that three entire days go by without any sightings at all of the packages on their way upstream. Even when my local PO has an occasional flub and fails to scan a package for Acceptance, it always gets an Accepted at Origin Sort Facility scan later that evening, and normal handoffs are all logged after that.
Where are the packages three days later, when they finally pop up on the radar? Maybe there's some sort of network outage... although as a theory, that's a bit of a stretch, and I assume inbound packages to you aren't going silent before delivery when they reach your area.

I have several purchases that shows NO TRACKING AT ALL but here they are! I could honestly claim to have never received these items because there is no record that I did. I am not that scummy though so will leave feedback so the seller knows it arrived. But yeah they havent been on the ball with tracking since about September.

See here the carriers dont scan on pickup and the PO doesnt scan unless you pay at the counter (and who does anymore?). Most items dont get scanned until they get to the sort center and again at delivery.

I'm convinced that when I have packages picked up, they sit in the truck overnight and they might deal with them in the morning, but there's alot for them to deal with so it might take a few days.

While that may have been true of the older ones in previous years, the current scanners upload their data virtually in real time. I get scan notifications within minutes of the event (including inbound ones where the carrier scanned it as Delivered, handed the package to me, and 3-4 minutes later I got an alert about it in my email account from MyUSPS). Just this morning I received a pickup notice for a purchase of mine that had been scanned in from the seller at 9:47 a.m., and the email about it reached me 5 minutes later.

I think this is true because I have scheduled p/u from my home (but I think the request has to before a certain time) - I print out the scan sheet and left it on top of the pkg(s) and they were scanned upon receipt. If I am not mistaken, the timeframe involved is 02:00 (at least that was the timeframe the last time I used it).

When my carrier does a pickup scan, the info shows up within a minute or two. Our carrier scans are in real time.
When I go to the PO, which is rarely, the scan won't show up until well after midnight. I am assuming our PO uploads everything at the end of the day, but that still doesn't explain why it takes until after midnight for them to show, since our PO closes at 4.30 and everyone is gone by 6.

It doesn't matter when the scanner is docked, when the scans are uploaded, or even when they are available to view online. The scan is supposed to be time-stamped to show the time the scan was taken. If the first scan visible is three days after parcel was presented to USPS, whoever accepted it didn't do their job.
Ebay probably loves when it happens as it eventually leads to higher seller fees charged and loss of small sellers.
I've never understood that argument. eBay couldn't care less about getting rid of a few small sellers. The purpose of this carrot is to get sellers to convince buyers that their stuff is being shipped on time.
