I recently purchased a Nintendo Switch that ended up coming broken.
After:
-a lot of hassle from the seller
-them suggesting I go to a store to buy another one, swap it out, and return it.
-them offering a 10% refund instead of a full refund.
-lots of questioning that "how am I going to know the items in the box are the ones that were originally the ones I sold".
I told the seller that we'd have to end our discussion and let eBay step in to honor the Moneyback Guarantee.
Today the seller changed their mind and accepted my return and provided a shipping label. Awesome!
From the character they've shown in the return discussion, my fear is that the seller is going to claim the package did not have all items in it or something untrue to avoid giving me a full refund. I have yet to send the package.
Is there a way to cover myself in this situation?

Use the prepaid return label you have been provided, hopefully you will not have to deal with any further issues related to this transaction.
You are protected by ebay's money back guarantee.
