I sold an item, didn’t offer local pickup at the time. But I noticed the address was a couple miles away, so I offered to refund shipping and let buyer pickup. Item has been picked up. (I have cameras outdoors, so have a record of buyer receiving the item.)
Is there any way to mark this as received now? I think I may have made things more complex by trying to make it easier.
(I know I should have looked all this up before offering local pickup, and refunding shipping, and having the item picked up. I’d never done it before and wasn’t thinking.)

Yeah, you did complicate things a bit. Hopefully your buyer is honest and doesn't file a non-receipt claim since you don't have tracking.
In future, cancel sale, relist with local pickup only (no shipping options) and have the buyer repurchase. There's a process to open the eBay app on your phone and scan the QR pickup code on the buyer's phone. Or just ship as originally intended and not bother with pickup.
For this sale, go to the transaction and mark it shipped. You will not have tracking which means your "tracking uploaded on time and validated" performance will take a hit. But since you're not a Top Rated Seller that really doesn't matter.
The only real concern is if the buyer files a non-receipt claim. You'd be forced to refund. eBay will not review your doorbell/security video.
As long as you have an honest buyer you should be good here. Just manually mark it as shipped and move on.
