Am I able to simply ship a product I sold to the buyer by writing their address on the package, bringing it to USPS, and sending it by media mail? On eBay, it "seems" that I'm being forced to either print a shipping label or a QR code and pay for it through eBay. Is that required? I make very few sales and don't want this complexity.

I assume that whatever you are selling is legally shipped per media mail.
And it sounds like your plan may be not to get tracking on your packages. So what's your plan when/if a buyer opens an INR case?

You can ship it the old fashioned way. Take it to the PO and ask them the cheapest way to ship the cd or whatever it is with tracking. Then manually enter the tracking number so eBay will know you mailed it by your handling time.
If you ship using eBay labels you get a discount and you can pay for the label from pending funds.
It's all up to you.

Yes,Lots of us write our own labels,no problem at all with that,saves you from buying a printer and such other things
Do whatever is easy,as long as it has the address put it in the mail and of course enter the tracking number😃

All USPS package postage automatically includes tracking (formerly known as Delivery Confirmation) at no additional cost. This includes Media Mail, both online and retail purchase.
If postage is purchased at the PO, the tracking number will be on the receipt and can be entered into the eBay transaction for seller protection.

When the OP posted originally, it sounded (to me anyway) like he had given no thought to tracking.
