I've never had an issue with the shipping calculator before today so I'm not sure what's gone awry. I used the calculator for a listing and it showed the price for a 11x9 envelope weighing 8oz to be $2.05. I thought that sounded correct and went about my business. A buyer pays for the item and I go to print a label and for an 11x9 envelope weighing 8oz it's saying it's $3.20. I've attached the screencaps of both pages. Did I miss something?

When you set up your shipping section in the listing, you first choose the shipping method, then later in the section you must also choose a package type - the options for package type are Letter, Large Envelope/Flat, and Parcel (not exact wording but close).
It looks like your listing specified a First Class Large Envelope/Flat. This costs less, the label can't be printed through eBay, and postage does not include tracking.
When you try to print a label you are paying for a First Class Parcel. Which costs more than a flat and does include tracking.
If this is the case, then you need to determine if your envelope actually qualifies as a Large Envelope/Flat or as a Parcel, then attach the appropriate postage.

Thank you for the response. It does qualify as a Large Flat Envelope. I went and checked USPS while I was at it and evidently First Class for large flats is only available at a post office. For similar listings I suppose I'll be adding in a handling charge to reflect the correct pricing.
Not entirely sure why eBay would list an option they can't actually provide but I suppose that's neither here nor there at this point.

You don't have to go to the PO to mail your flat; you can just use stamps.

They offer those option because you are not "required" to ship via ebay labels. They are showing the shipping options that the USPS offers. You choose how you want to ship/how much you want the buyer to pay.
You are not "required" to use tracking. Some choose not to on items that are not saleable if "tracked package" costs were to be included/charged. Like selling a $5 item.
You don't need a handling charge. You just need to select the correct service that includes tracking. "package"

As noted already, you don't need to add a handling fee, you just need to choose the right mailpiece type.
I don't know what form you are listing from, but from a desktop this is what I see in the shipping section.
In the first drop-down menu you choose the shipping service.
Near the bottom under "Package weight & dimensions" you choose the package type. If you want the calculator to reflect parcel rates, just choose the "Package (or thick envelope)" option.
