Is there an easy way to adjust the shipping and return policy preferences for all your listings without addressing each one individually

Yes. Very quick fix using Edit All function 
(Editing Shipping may not work depending on your needs)

Go to Active Listings
Under Results Heading

Click Edit Button Down Arrow

Select Edit All

Follow Prompts Making Sure You Select All Items In The Edit Screen

THEN Make Sure Your Edits Are Correct Before Submitting

You can go through the Bulk Editing tool. 

1) Select all the items you want to change.  This may be all of them.

2) Tick "Edit Selected".

3) In the Bulk Editor, select all the items that you want to make a specific shipping or return policy preference.

4) Click "Bulk Edit", then "Shipping Policy" or "Bulk Edit" and then "Return Policy".  Click the right arrow and then make your change preferences.  Ebay has "profiles" set up for different preferences and you may have to create one for yours.  Select it and then hit "Done".

5) Click "Apply".  Wait until it edits out.  This may take a long time.

6) Repeat until you get your changes made.

7) Finally, click "Submit All" and then it'll give you a final confirmation screen.  Click "Submit" on that screen and wait some more.

Assuming the software works correctly (that's a HUGE problem with ebay right now, they rolled out a lot of basically alpha-level software recently and that's one of them), it should give you a "Listings submitted successfully" message that you can click and it'll bring you back to your listings.
