After updating your addresses as already posted, you likely will have to also use the edit button next to your return address on the create label page for the first label after that, then it will stick for future labels.
Also if you have not done so recently, clear your browsing and cache history. Sometimes things can get locked in there and can cause things to revert back to old information.
