So my buyer is picking my item up...something that rarely happens but I do offer it as an option. And my question is: Does eBay automatically realize that when the customer chooses "local pickup", it should not impact the one-day shipping thing. Or is there something I should be doing to insure that this doesn't cost me a "ding".

As far as I know, there is no way around the no way to track online ding. It's a minor ding and we do get a little bit of a buffer for that metric.
I have the same problem with the handful of freight shipped items I sell.

@doonbuggeeYes, you should be checking your dashboard to make sure that you don't get a ding for the local pickup. According to Trinton, our eBay rep, during a local Wed. chat, if the buyer selects local pickup only, you won't have to worry about a shipping defect...but better safe than sorry!

Additionally, if the buyer selects Local Pickup at checkout, you won't have to worry about an on time shipping defect.
