The last time I had a freight item to sell, I just checked a few long distance routes with my freight outfit and
used a flat rate format for continental US. At the end of the auction, I amended the listing to show when shipped, but I ended-up loosing $50.00 and eBay didn't recognize the item was shipped for days.
As tricky as this was, I'm tempted to try their built-in shipping calculator but a little nervous. Does anybody trust this to get it right and is it safe to use it to ship a palletized freight item to Alaska, Hawaii, or Canada and other foreign destinations?

I wouldn't use it. eBay can't get the rates right half the time for normal packages.
Plus freight shipping can get billing adjustments out the wazoo - incorrect classification, under or over estimating weight, the dreaded not commercial location adjustment, etc... I have had endless issues getting adjustments fixed with Fedex or UPS when eBay is the owner of the shipping account - I would never chance it with freight shipping.
I use Freightquote.com and Uship.com to get freight quotes (uship is currently the better rates of the two for me). Both have online quote functions so you can get rates 24/7.
I don't know how much you freight ship, but there are some tricks to getting a more favorable rate when freight shipping that I'm happy to share if you'd like.

Ebay USPS is the only thing that works correctly. I would not use it for UPS or FedEx and would never even considered it for freight, which can be complicated to be sure you get the best prices and everything goes smoothly.
