I normally only ship within the USA and to Canada. Sending a puzzle to a buyer in the UK. What information exactly do I need to successfully ship the puzzle? Do I write VAT PAID in British pounds on the outside of the box? So I need an invoice on the outside of the box? And Inside? Do I need the harminization number?

The VAT PAID information should be a part of the buyer's address. If you buy the label through eBay the information will automatically be printed in the address portion of the label. You do NOT need to additionally write it anywhere.
An invoice would be suggested and inside the box. Just make sure that amount on the invoice matches the amount shown on the custom form. And everything in U S Dollars is perfectly acceptable.
Since UK is no longer part of the Euro Union you do not need a harmonization number.

I've also placed the invoice on the outside of the box in the document pouch - anecdotal reports from some UK buyers is that this hurries things along a bit.

Actually if you print the labels through eBay (and others) the customs label is created automatically and is an integral part of the shipping label. You do not need to create a separate one.

I dont think you can print an invoice for an item thats already been paid. You can print a packing slip although Ebay will not put the sale price on it.
If you buy the shipping label through Ebay then the necessary Customs forms will be included. If the buyer paid the VAT then there will be an extra line in the address saying something like PAID and a code number. UK Post will see that and know that the duty was already paid by the buyer to Ebay.
