So I listed an item the other day & I forgot to change the weight of the item. The product sold recently, I printed out the label, & when I took it to get it shipped the post office would refuse to sell it due to the weight difference of the label listed it as & how much it actually weighs. How would I fix this issue?

You have 5 days to void that label, and get a credit for it. Takes 2-3 weeks for the credit to show up.
You can print another label by going to the item purchased, and enter the correct weight/class as needed.

I think the easiest way for you to do this is to buy a label from the post office and void the eBay label. You could also just hit 'purchase shipping label' and purchase another one with the correct service, weight and dimensions, then void out the original one, but I think the first option might be the easiest for you in this situation.

The seller will pay more for shipping at the post office.
The best solution is to void the label and purchase a new one with the correct package size/weight.

How can we request a cancellation of a label for this situation for a double whammy cancellation:
-the buyer "paid for shipping"
- somehow when we went to print the label, it stated it was already printed, and the only option was to cancel it and re-purchase it.
- the local postoffice refused that printed label
- we paid directly (a lot more) at the p.o. counter
- we tried to cancel that second label, and it would not let us because it said it was already cancelled.
- if it takes >5 days for all this to sort out, then our "5 days to cancel" expires.
So we're out $10 at the p.o., and potentially another $5 X 2 (ebay's label price),
and potentially another $5 because the buyer gets the refund(s)
Separately, why cannot one adjust the weight to the actual packaged weight, before purchasing the label, even if SELLER pays for shipping ("Free Shipping")?

You can and should adjust the weight and package dimensions on the label creation page as needed before completing your label purchase. Both the single label and bulk label pages allow you to do this.
You have 5 days from label creation to void a label. Refunds for voided shipping labels come through in about 21 days.

Shipping a transmission which is 103 lbs. usps only ships up to 70 lbs. buyer paid $120 for shipping. How does eBay know this item was shipped using another shipping company and me getting my payment?
